Hey! I hope every one's week is off to a good start. I've been wanting to make a homemade pico de gallo for awhile but just haven't ever gotten around to it. I really enjoy it when we're at mexican restaurants. It's so light and fresh and is a really nice accompaniment to all the cheesy and greasy mexican food! It's so easy to make, and I think I might prefer it to salsa in a jar. It was great with the homemade taquitos that I made that I will post tomorrow. Enjoy!
1 Cup Diced Tomatoes
1 Cup Diced Onions
1 1/2 Tablespoons Minced Garlic
1 Tablespoon Fresh Cilantro, chopped
Mix all ingredients together in a small bowl and let set for about 1 hour so that all of the flavors can marry together.
