Easter Cupcakes

Hey there! I have a super duper cute Easter treat that your family is sure to enjoy! Non-coconut lovers, please don't turn away! If you don't like coconut, you can simply dye some frosting green, put it in a sandwich baggy, snip off the end and just sort of squiggle the icing all over the top of the cupcake to make it look like grass. These are really fun and super easy. As i'm writing this I just thought that the coconut would be adorable colored in pink, purple and blue as well! Aren't those the colors you can get in the fake "grass" that you put in Easter baskets? I think you can get yellow too, but I'm not sure. Wouldn't it be adorable to have a big platter of all different pastel colored "grass" ones? Ahh, so cute! Just use your favorite cake and frosting recipe, or make it even easier on yourself by using a boxed cake mix and a tub of frosting! Have fun with these!

Ingredients:
1 Recipe for Cake (store bought or homemade)
1 Recipe for Frosting (store bought or homemade)
Sweetened Shredded Coconut
Easter Peanut M&M's
Green Food Dye

Directions:
Prepare your favorite cake and frosting recipe and make into cupcakes. In a sandwich bag, add your coconut and then add a few drops of food dye, close the bag, and shake it until all of the coconut turns green. Place a mound of coconut on top of the icing, pressing down a bit to get it to stick. Put a little bit of frosting on the bottom of each m&m to help it stick to the coconut, use 3 m&m's per cupcake. Voila! Cute little easter cupcakes!

I have plans on making those same cupcakes a little closer to Easter! I'm scared I'll eat too many until then! I think I'm going to do coconut cupcakes :)
