Applesauce Oat Streusel Muffins



Hi there :) If you're like me, you're constantly looking for yummy Fall treat recipes to add to your collection..I just love Fall desserts! Almost even more so, is how it makes the house smell when something pumpkiny or cinnamony is baking. It just totally puts me in a cheerful mood and bring the season alive! I have an amazing delicious muffin recipe to share with you tonight. I made these muffins months ago, I just never got around to posting them until now. These might be my favorite muffin, and to be honest, they're so good on their own that they don't even need the streusel topping, but that topping crisping up in the oven sure does make it smell amazing while baking! I have made them without when I was wanting something a little healthier, and they are truly amazing both ways. So what are you waiting for? Go bake up a batch!

Ingredients (muffin):
2 Cups All-Purpose Flour
2/3 Cup Granulated Sugar
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Teaspoon Baking Powder
1 Cup Cinnamon Applesauce
1/2 Cup Canola Oil
2 Eggs, beaten
1 Teaspoon Vanilla Extract

Directions (muffin):
In a large bowl, combine flour, sugar, baking soda, baking powder and salt. In a separate bowl, whisk together your eggs, oil, applesauce and vanilla; mix well. Pour applesauce mixture into the dry ingredients and mix until thoroughly combined. Scoop batter into a prepared muffin tin about 3/4 way full. Bake in a pre-heated 350 degree oven for 20-25 minutes or until toothpick inserted in center comes out clean.

Ingredients (streusel):
1/2 Cup Old Fashioned Oats
6 Tablespoons All-Purpose Flour
1/2 Cup Brown Sugar
1 Teaspoon Ground Cinnamon
4 Tablespoons Butter, semi-soft
Directions (streusel):
In one bowl, combine all ingredients with a fork until combined. Mixture should be crumbly. Sprinkle over muffin batter before baking.

  3. Okay! Just sos you know I totally had to restrain myself from eating the all the streusel topping off the tops of all the muffins when they came out of the oven - that stuff is amazing! Loved these and will make them again! Thanks for the recipe - I'm going to put a link to your blog today!
