Ingredients:
2 Eggs
1 1/4 Cups Applesauce
1/3 Cup Vegetable Oil
1/4 Cup Milk
1 1/4 Cups All-Purpose Flour
3/4 Cup Granulated Sugar
1 1/2 Teaspoons Baking Powder
3/4 Teaspoon Ground Cinnamon
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup + 1/4 Cup Old-Fashioned Oats
1/2 Cup Miniature Semi-Sweet Chocolate Chips
Directions:
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, baking soda, salt and 1 cup of the oats. In a small bowl, add the liquid ingredients and whisk until incorporated, then add to the dry ingredients, and mix just until everything is combined evenly. Pour into a prepared loaf pan. Mix together the 1/4 cup oats and the miniature chocolate chips and sprinkle evenly over the batter. Bake in a pre-heated 350 degree oven for 55-65 minutes, or until the oats start to brown and a toothpick inserted in the middle comes out clean.
