Happy Friday! More importantly, Happy National Pumpkin Day! :) I'm totally on the whole pumpkin bandwagon this time of year. Is it just me or does it seem like this year is especially pumpkin crazy? I feel like I can't walk through the grocery store without seeing pumpkin flavored this and pumpkin flavored that. I'm embracing it all! What better way to celebrate today than to share some delicious pumpkin cookies. If you're a pumpkin lover, then you will absolutely LOVE these cookies. I make them a few times every year and even got 2nd place in a contest with them a few years back. I hope you love them as much as I do! :)
Ingredients (cookies):
1 Cup Shortening
2 Cups Granulated Sugar
15 oz. Can Solid Pumpkin (not pumpkin pie mix)
2 Eggs
2 Teaspoons Baking Soda
2 Teaspoons Ground Cinnamon
2 Teaspoons Pumpkin Pie Spice
1 Teaspoon Salt
4 Cups All-Purpose Flour
Directions (cookies):
Cream together the shortening, granulated sugar and pumpkin. Add eggs and mix well. Combine the flour, baking soda, cinnamon, pumpkin pie spice and salt. Gradually add to pumpkin mixture until evenly combined. Using a large cookie scoop or 2 spoons, drop a good amount (about 1/4 cup for each cookie) of dough onto a un-greased cookie sheet. Bake 13-15 minutes in a pre-heated 350 degree oven. Remove from cookie sheet and let cool completely on cookie racks.
Ingredients (icing):
6 Tablespoons Butter
8 Tablespoons Whole Milk
2 Cups Confectioners Sugar
2 Teaspoons Vanilla Extract
1 Cup Brown Sugar, packed
Directions (icing):
In a small saucepan, heat butter, milk and brown sugar until everything is melted and dissolved. Cool completely and add the vanilla and confectioners sugar, mix well. Once cookies are completely cooled, dip the tops into the icing and sprinkle on Fall themed sprinkles while the icing is still wet, if desired.
