Easy Vanilla Cupcakes

Hey guys! I wanted to get up one last recipe before Easter in hopes that maybe some of you are still searching for one last sweet treat to make! These cupcakes are not only super easy to put together, but they are seriously SO delicious! I would love to know if you make them, post a pic to my Facebook page (HERE) and let me know how you like them! Happy Easter! :)

Ingredients:
2 Sticks (1 Cup) Butter, softened
2 Cups Granulated Sugar
3 Cups Cake Flour, sifted (must be cake flour, not all-purpose!)
3 Teaspoons Baking Powder
1/2 Teaspoon Salt
4 Eggs
1 Cup Whole Milk
1 1/2 Teaspoons Vanilla Extract

Directions:

Pre-heat oven to 350 degrees and prepare a cupcake pan with liners.

In the bowl of an electric mixer fitted with the paddle attachment, beat butter until creamy.

 Add sugar and beat until light and fluffy.

Add eggs, 1 at a time, beating well after each addition.

Add your salt and baking powder to your sifted cake flour and give it a good mix.

Add your vanilla to your milk.

Alternately add flour mixture and milk & vanilla mixture, ending with flour mixture. Scrape sides of bowl as needed and mix just until everything is combined.

Bake for 20-25 minutes or until golden brown a toothpick inserted in the middle comes out clean. Cool completely before frosting.

* Makes 24 cupcakes, or 3 9-inch layers.

{This is the frosting recipe I used: Vanilla Frosting}
