Classic Chicken Salad

Good evening :) When I was making my grocery list this week I was trying to think of some new things to have for lunch, and chicken salad was one of the first things that came to mind. I love it and never make it for myself, probably because I know I'm the only one in the house that will eat it. I decided to go for it and make a small batch just for me that I can have during the week. Just simply double the recipe if you are making it for a gathering or just anyways 'cause it's so darn good!

Ingredients:
2 Boneless Skinless Chicken breast, washed and trimmed of excess fat
1/3 Heaping Cup Miracle Whip
1/4 Cup Celery, finely diced
1/4 Teaspoon Dried Parsley
1/8 Teaspoon Celery Seed
Olive Oil
Salt & Pepper

Directions:
Pre-heat oven to 375 degrees.

Line a cookie sheet with foil and place your chicken on it and drizzle with olive oil and sprinkle with salt & pepper. Bake for 40 minutes, making sure juices run clear (not pink) when cut into. Remove chicken to a cutting board and cut into bite sized chunks. Let cool completely before the next step.

To your chicken, add your miracle whip, celery, parsley, celery seed and salt & pepper to taste; mix well. Cover and let chill in the fridge at least 1 hour before serving on bread, with crackers or however you prefer.
