Sesame Chicken

Hi there! I hope everyone out there had a good weekend. We had a great one and really enjoyed the beatiful weather outside! We set my daughters new pool up and she had a blast out there. I love Texas this time of the year, not so much when it's 110 degrees outside though - yuck! This dish I'm going to share with you tonight is perfect for any time of the year, it's delicious and light at the same time - I love it and I hope you do too!

Ingredients:
3 Boneless Skinless Chicken Breast, cut into bite sized pieces
1 Tablespoon White Vinegar
1/2 Cup Chicken Broth
1 Tablespoon Soy Sauce
2 Tablespoons Olive Oil
2 Tablespoons Sesame Oil
1/3 Cup All-Purpose Flour
1 Tablespoon Light Brown Sugar
3 Garlic Cloves, minced
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper
1 Tablespoon Sesame Seeds
Rice & Vegetables, for serving if desired

Directions:
Pre-heat oven to 400 degrees.

In a small bowl, whisk chicken broth, soy sauce, sesame oil, vinegar, brown sugar and garlic; set aside.

In a large oven safe skillet set it to medium-high heat with the olive oil.

Mix the flour, salt and pepper together and then sprinkle it over the chicken and toss it all together. Add the chicken to the pan and cook until seared on the outside (it will finish in the oven if its not completely done). Pour wet mixture into the pan and mix it to coat everything. Place skillet in the oven for 20 minutes.

Remove from the oven and sprinkle with sesame seeds. At this point I had some steamed broccoli that I mixed in with the chicken and I served it over white rice.
