Cheesy Ranch Potatoes

Oh man! These potatoes were so delicious! I was trying to think of some new side dishes and I thought of taking the classic ranch potatoes but putting a new spin on them. A really really sinful spin I should say! These totally hit the spot, and my husband deemed them his new favorite potatoes - score! I just love when a recipe idea turns out good :) Give these a try next time to want to switch things up a bit!






Ingredients:
3 lbs Red Potatoes, washed and cut into cubes
1/3 Cup Vegetable or Olive Oil
1/2 Cup Heavy Cream
8 oz (2 cups) Shredded Medium Cheddar Cheese
1 (1 ounce) Packet Hidden Valley Ranch Dressing & Seasoning Mix
1 Tablespoon Freshly Chopped Parsley
Salt & Pepper, to taste
Aluminum Foil

Directions:
Pre-heat oven to 450 degrees.

Place your cut potatoes into a large bowl. Add the oil and mix all of the potatoes around in it to coat them evenly.

Add your ranch packet, and some salt & pepper and mix thoroughly.

Add half of your cheese (1 cup) and the heavy cream and stir making sure all of the potatoes are evenly coated.

Transfer potatoes to a 9x13 baking dish and cover with a sheet of aluminum foil. Make several slits in the top of the foil to allow the potatoes to vent while cooking.

Place baking dish on your pre-heated oven and bake for 50 minutes, or until potatoes are tender.

Remove the potatoes out of the oven and remove the foil and give the potatoes a good stir. Sprinkle on the remaining cheese and place under the broiler on high and cook until the cheese is golden brown and bubbly. Sprinkle with parsley and serve.
