Rocky Road Cookies



These cookies are impressive looking, totally delicious and impossibly EASY thanks to the help of a store bought Betty Crocker cookie mix. Sometimes it's nice to get a little help from the store and still make something totally awesome. Of course you can feel free to make homemade chocolate cookie dough, but I wanted to go quick, easy, and simple with these. They are no-fuss but you would never know that when you bite into one. Ooey, gooey and scrumptious! My Mom makes these amazing cookies using this very mix, she made them all the time growing up, especially around Christmas time. I will be sharing them in the next few weeks, so stay tuned!

Ingredients:
1 Pouch Betty Crocker Double Chocolate Chunk Cookie Mix, plus ingredients called for on package
1/4 Cup Slivered Almonds, chopped (plus more for garnish, if desired)
1/2 Cup Mini Marshmallows (plus more for garnish, if desired)

Directions:
Pre-heat oven to 350 degrees.

In a large mixing bowl, mix cookie dough according to package directions.

Stir in your almonds and marshmallows.

Scoop into even sized portions on a cookie sheet lined with parchment paper or a non-stick mat. (this is very important because the marshmallows inside the cookie will start to ooze out and will be VERY hard to remove the cookies without damaging them if you don't use something).

Bake for 12-15 minutes (refer to package directions)

Makes about 20 cookies. (I used a 1 Tablespoon sized scoop and did heaping tablespoons)
