Brown Sugar Oat Muffins

Good evening! I hope all of the Mom's out there had a fabulous Mother's Day yesterday! Unfortunately I didn't get to spend the day with my amazing Mama as we are miles apart, but I was thinking of her all day! I love you Mama!!! Now let's get to these muffins, they are easy, flavorful, and a perfect snack, or breakfast on the go..and relatively healthy to boot! I'm really not a big breakfast fan, but if I'm going to have anything, a muffins fits the bill perfectly for me. I like to pop them in the microwave for 15 seconds and spread with butter..yum!! If you like most breakfast-type, you will like these!! Have a great night everyone!

Ingredients:
1 Cup Old-Fashioned Oats
1 1/2 Cup All-Purpose Flour
3/4 Cup Brown Sugar
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
2 Eggs
3/4 Cup Fat Free Milk
1/4 Cup Canola Oil
1 Teaspoon Vanilla Extract

Directions:
In a small bowl, combine first 6 ingredients. In another small bowl, beat the eggs, milk, oil and vanilla. Stir into dry ingredients just until moistened. Fill a lined muffin tray 2/3 full and bake in a pre-heated 400 degree oven for 15-17 minutes or until a toothpick inserted in the center comes out clean. Makes 1 dozen.
