Pumpkin Chocolate Chip Muffins





Ingredients:1 1/2 Cups Sugar
1 Cup Canned Pumpkin
1/2 Cup Vegetable Oil
1/2 Cup Water
2 Eggs
1 2/3 Cups All-Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 Teaspoon Pumpkin Pie Spice
1 Teaspoon Ground Cinnamon
3/4 Teaspoon Salt
1 Teaspoon Vanilla Extract
1 1/2 Cups Semi-Sweet Chocolate Chips

Directions:
In a large mixing bowl, combine sugar, pumpkin, oil, water, and eggs; beat well. Combine dry ingredients; gradually add to pumpkin mixture and mix well. Stir in chocolate chips. Line a muffin tin with paper liners and fill half-way. Bake in a pre-heated 350 degree oven for 12-15 minutes. Insert a toothpick in to check for done-ness. If it comes out clean, then it is done. Remove to a wire rack and cool. This recipe should make 24 muffins.

  3. I'm not keen on chocolate chip anything, but I do like the idea of pumpkin muffins. I can almost smell their spicy goodness from here! YUM
