Vanilla Pudding Mix Chocolate Chip Cookies

Well the Super Bowl is behind us and I had a lot of fun cooking for the family with my mother in-law. Times like this make me realize how much I love cooking and getting to share it with other people. I happen to enjoy rushing around preparing and cooking things for a crowd, to some it would seem stressful, but to me it is the exact opposite. It completely de-stresses me. That's when I know it's my passion..especially doing it for people I love! Speaking of family, I got this recipe from my sister in-law, Jessica. I had never heard of cookies using a packet of pudding mix before, and they are SO good! In my opinion, you can definitely taste the vanilla from the mix come through, and I love it. There is something so addicting about the flavor/texture of these cookies. They are soft, yet hold their shape beautifully. These cookies are some of the best straight out of the oven cookies I've ever had. I also love that they make a ton. In my opinion, you can never try out too many chocolate chip cookie recipes, and some are okay, and some are great, this one is in my top 2! So if you've never made these GO MAKE 'EM! And I dare you to eat just 1..totally NOT possible! Thanks for sharing them with me Jess!

Ingredients:
1 1/2 Cups Shortening
1/2 Cup Granulated Sugar
1 Cup Brown Sugar
3 Eggs
1 Teaspoon Vanilla Extract
1 Package Instant Vanilla Pudding Mix (Jessica says the recipe calls for the 4 serving one, but she uses the bigger one, which is 6 servings, so that's what I used and would recommend using as well)
1 1/2 Teaspoons Baking Soda
3 1/3 Cups All-Purpose Flour
1 Bag Semi-Sweet Chocolate Chips

Directions:
In a large bowl, cream together shortening and both sugars until fluffy. Mix in eggs and vanilla. Stir in vanilla pudding mix. Add baking soda and flour and mix until everything is evenly combined. Mix in chocolate chips. Using a cookie scoop or spoon(s) drop by teaspoonfuls on ungreased cookie sheets. Bake in a pre-heated 350 degree oven for 10 minutes. *Note: I think my cookie scoop is about a tablespoon sized one, and that worked perfectly for me. Either way, these will come out great!

  1. I have heard that cookies with pudding mix included are delish, but I have yet to try it. These look amazing tho, and your valentine's day plate is adorable!

    CCC a favorite. I'd love additional vanilla flavor of the pudding, and I'll bet the texture is soft. Yum!
