Hey everyone! I've got a super easy and yummy meal idea to share with you all tonight. My husband had these at Taco Bueno and liked them so much that we decided that there wasn't much to them, so I tried to re-create them at home, and they turned out way better! These are so simple and quick to make. You can even make them ahead of time, and stick them in the fridge for later and then stick them on the griddle or in a fry pan for a really quick meal. I haven't tried freezing them then cooking them later, but I don't see why that wouldn't work either. Give 'em a try!
Ingredients:
10 Flour Tortillas
1 lb Ground Beef
8 oz Sharp Cheddar Cheese, shredded
1 Teaspoon Garlic Powder
1 Teaspoon Cumin
1 1/4 Teaspoons Chili Powder
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/4 Teaspoon Red Pepper Flakes
Vegetable Oil
Directions:
Brown your ground beef in a skillet and as it cooks, break it up with a masher; you want it to be very fine, once done drain it to remove any excess grease. Place all of your seasonings in a small bowl and whisk them together and add a little of the mixture at a time and taste in between until it is well seasoned. Take a flour tortilla and place it on a flat surface and sprinkle some cheese down the middle, then spoon some of the meat down the middle, then a little bit more cheese, so the meat has something to stick to on both sides so it all doesn't fall out as you're working with them, and then roll them up. Repeat until you have filled all of your tortillas. Warm up a griddle or a fry pan with a small amount of vegetable oil, just enough to barely coat it so the tortillas can crisp up. Place your tortillas, seam side down, on the hot surface and cook until golden brown and crisp on one side, then flip with a spatula and repeat until the other side is crispy and golden brown. Serve with salsa and/or sour cream, if desired.

ReplyDeleteYUM!! I make a similar roll up, but I cook them in my george forman grill, so they cook on both sides at once...works great.

ReplyDeleteMade these last night for supper and they were a HUGE hit! My husband went on and on about them and they were so easy! He liked the seasoning of the meat even better than a taco seasoning packet which I was super excited about :) And as for how many it feeds? I had 10 soft shells and filled them all up...could probably get more if you didn't put as much in but they were perfect!

My husband was so excited to try them that he volunteered to cook the whole meal with me. Love it! We both really enjoyed these. They'll definitely be making these time and time again.
