Congo Bars


Let's sweeten things up here a bit! These bars are so scrumptious and are jam packed with chocolate chips, what could be better, right!? You will definitely want to whip up a batch this weekend :) I baked mine slightly longer than the recipe calls for because I don't like my cookie bars to have any bit of doughy-ness to them, for the same reason I like cakey brownies as opposed to fudgy ones. You guys are going to love this recipe!

Ingredients:
2 3/4 Cups All Purpose Flour
2 1/2 Teaspoons Baking Powder
1/2 Teaspoon Salt
2/3 Cup Butter, softened (10 & 2/3'rd Tablespoons)
2 Cups Light Brown Sugar, packed
3 Eggs
1 Teaspoon Vanilla Extract
12 oz. Bag Semi-Sweet Chocolate Chips

Directions:
In a small mixing bowl, combine flour, baking powder and salt; set aside. In a large mixing bowl cream together the butter and sugar until completely combined. Add eggs, one at a time, mixing after each addition. Add vanilla and mix it in. Add flour mixture and mix until everything is combined. Stir in chocolate chips. Use cooking spray (I didn't have any so I used butter and it worked perfectly fine) to coat a baking dish, then take your dough and evenly spread it into the dish. Bake in a pre-heated 350 degree oven for 30 minutes or until the top is starting to turn a golden brown color. Test the center with a toothpick to check for done-ness. If you find that they are starting to turn golden brown but are still too gooey in the middle, loosely place a piece of tin foil over them while they continue to cook.
