Gingerbread Men Stuffed Cupcakes


Happy Friday! I'm so excited for Christmas that I just had  to do something to contain myself until we get past Thanksgiving, which is the day I will make my husband my husband will lovingly offer to drag out all of my Christmas decorations - yay! Seriously though, how stinkin' CUTE are these cupcakes? I can't take it. I love how the cookie bakes into the cupcake and it all becomes one. Put these on your Holiday baking list and you will have people ooo-ing and ahh-ing at your amazing-ness! :)

Ingredients:
  • 1 Recipe for Vanilla Cupcakes - homemade, store bought mix, whatever floats your boat! (I used a Sprinkles cupcake mix that I got at their bakery, if you've ever wondered if the $14 price tag is worth it to try the mix - IT IS! The Dark Chocolate is my fave)
  • 1 Bag Pepperidge Farm Ginger Man Cookies (if you can find others that you think would work, feel free!)
  • Cupcake Liners
  • Piping Bag & Tip (I use a Wilton 1M tip and Wilton Disposable bags - makes it so easy! If you don't have bags or tips, then just frost with a knife, you will just have to be more delicate with covering the gingerbread heads)
  • Vanilla Frosting (use your favorite recipe or store bought, my recipe is below)

Vanilla Frosting

Ingredients:
2 Sticks Unsalted Butter, firm but not cold
1/8 Teaspoon Salt
3 1/2 Cups Confectioners Sugar
1 Teaspoon Vanilla Extract
1/2 Teaspoon Milk

Directions:
In a mixer, beat the butter and salt on medium speed until light and fluffy. Reduce speed and gradually add the confectioners sugar and beat until incorporated. Add the vanilla and milk and beat until smooth and creamy. 

Directions:
Fill your cupcake liners almost all the way full, take a cookie and insert it directly into the middle of the batter. Bake according to your recipe or package directions. The cupcake will not bake all the way over the cookie, you may notice the top of the cookie start to brown, that is completely fine and it will still taste great, so don't be alarmed. Let cupcakes cool completely (very important) before frosting. Carefully pipe (or spread with a knife) your frosting over the top of the cupcake, making sure to cover the exposed cookie. Add festive sprinkles and ENJOY your adorable creation!
