Pillow Cookies


Hey there! Hope everyone is having a good week so far! We are enjoying the cool temps here in Dallas, I think Fall finally (cross my fingers) decided to show up..although it's supposed to be 72 on Thanksgiving, ha! Okay, I really have no words for these cookies. They are amazing and genius and just ridiculous in the best way possible. Without further ado...

Ingredients:
1 Batch Brownies, cut into 1 to 1 1/2 inch squares (use your favorite recipe or a boxed mix - which is what I did)
1 Batch Chocolate Chip Cookie Dough, chilled overnight or at least 2 hours (use your favorite recipe, or store bought dough, I used the Nestle Tollhouse recipe)

Directions:
Pre-heat your oven according to your chocolate chip cookie dough directions. Using a large cookie scoop (mine probably holds about 1/3 cup of dough) scoop cookie dough onto a cookie sheet. Using your fingers, make a big indention in the top of the dough and keep working around until you form a little bowl, place a brownie square in the middle and slightly push it down (don't completely smush it) then carefully spread the sides of the dough up over the brownie, completely covering it. This is why it is important for the dough to be cold so you can easily work with it, otherwise it will be too sticky. Bake according to your recipe directions. Transfer to wire rack to cool, then break into them and discover the delicious beauty!
