Italian Grilled Panini

Since this is my first post of the new year I would like to say Happy New Year to each and every one of my readers! I'm so excited to get back to blogging full time and developing and sharing some amazing yummy recipes with you all! My first post of the new year is this super simple but gourmet tasting Italian panini. My husband and I both loved this and my 18 month old was also a huge fan - so you know it's got to be good! 

Ingredients:
6 Slices Good Quality Bread (I used Tuscan bread from Target's bakery section)
Mozzarella (I took a 5 oz block and shaved it into big pieces)
3/4 Cup Parmesan Cheese, shredded
4 Tablespoons Butter, softened
1 Teaspoon Garlic Powder
1 Teaspoon Dried Parsley

Yield: 3 Paninis

Directions:
Place your softened butter in a bowl and mix in your garlic powder and parsley until combined. Spread your butter on 1 side of each of your slices of bread. Place 3 pieces of bread on a pre-heated grill plate with the ridge side facing up, or onto a panini press. (you can make these like traditional grilled cheese using a normal pan as well). Sprinkle half of the parmesan on each slice, then layer mozzarella on top of that, then finish off with the rest of the parmesan. Since I wasn't using a panini press I just took my heavy cast iron skillet and placed it on top of my sandwiches. Cook about 3-4 minutes and then flip and place your cast iron skillet or something heavy on the other side and cook another 3-4 minutes. These go perfect with tomato soup!
