Trisha Yearwood's "Miss Mickey's" Peanut Butter Balls


It's been awhile! I hope everything has been going good for all of you :) I'm back with a really fun, easy and yummy recipe! I started watching Trisha Yearwood's cooking show around November of this past year and not only did I fall in love with the food she makes, I fell in love with her too - she seems like such a fun loving southern gal! I immediately purchased both of her cookbooks and now they are in my top favorites that I own. There are so many recipes I want to try. This recipe was one I tried over the holiday's this past year. Excuse the pictures, I was making about a gazillion other things at the time..you know how that goes! These are such a great treat, and would also be amazing half-dipped in chocolate, or just drizzled with it. This is definitely one that the kids can help with, too - always a plus!

Ingredients:
1 Cup Granulated Sugar
1/2 Cup Dark Corn Syrup
1/2 Cup White Corn Syrup
2 Cups Crunchy Peanut Butter
4 Cups Rice Krispie's

Directions:
In a large pan, add the sugar and corn syrups and stir together over medium heat for about 3-5 minutes, making sure everything is mixed completely together. Remove the pan from the heat and add the peanut butter quickly, stirring it in until it is all combined. Pour in the rice krispie's  and mix well. Shape the mixture into ping pong sized balls with your hands. Set on waxed paper, and store in an airtight container for up to 2 weeks.
