Black Bean & Avocado Salsa

Happy Wednesday :) I have a super easy and fresh treat for you guys today. I got a craving for a really fresh salsa yesterday and luckily I was already on my way to the grocery store so I just grabbed everything for it and made it today. It's just what I wanted! I could barely wait to dig in when I was chopping everything - it all smelled SO good and fresh. My 1 1/2 year old has become obsessed with watching me cook lately, so we got her high chair out of storage so she could sit up at my level and watch, when the salsa was done I gave her a little to try and then she was begging for more and had about 4 little servings - I swear she will eat anything! This is seriously good though, and so easy to throw together. It would also be delicious on some grilled chicken, and with the addition of some fire roasted corn, oh yum! Enjoy folks :)

Ingredients:
2 Roma Tomatoes
2 Avocados
1/2 Cup Red Onion, diced
1/2 Cup Black Beans
1 Teaspoon Olive Oil
1 Teaspoon Lime Juice
1 Teaspoon Cilantro, chopped
1/8 Teaspoon Garlic Powder
1/8 Teaspoon Salt
1/8 Teaspoon Black Pepper
Tortilla Chips, to serve

Directions:
Cut your avocados in half and scoop out each half carefully with a spoon and cut into small bite sized pieces and toss into a big bowl. Cut your tomatoes in half and remove the seeds by scraping a spoon down the  middle, then cut into small bite sized pieces and toss that into the bowl as well, along with your diced onion. Drain and rinse your black beans, and measure out 1/2 cup and add them to the bowl. 

In a small bowl, add your olive oil, lime juice, garlic powder, cilantro, salt and pepper; mix it all together and add it to the ingredients in the big bowl and carefully give it all a mix until well combined. Chill at least 1 hour before serving.
