Crispy Cheddar Chicken

Hi there :) Hope you've all had a good week, yay for tomorrow being Friday! I made this for dinner last night and it was super yummy! The cheese gave it a great flavor and the breadcrumbs mixed with it gave it a great crunchy texture. It was a total comfort meal that I served with homemade mashed potatoes and steamed veggies. I will definitely be making it again!

Ingredients:
4 Boneless Skinless Chicken Breast
2 Cups (8 oz.) Cheddar Cheese, shredded
1 1/2 Cups Italian Style Breadcrumbs
1 1/2 Cups Milk
Salt & Pepper, to taste
Olive Oil, to drizzle

Directions:
Pre-heat oven to 350 degrees and prepare a cookie sheet with parchment paper.

Take 3 separate dishes and add your cheese, breadcrumbs and milk to each of them. Season your milk with a little salt & pepper if desired. 

Wash your chicken and trim it of any excess fat. Dip it piece by piece first into the milk, then dip it into the cheese, pressing the cheese onto the chicken firmly so it sticks as much as possible, some will fall off when transferring it to the next step of coating it in the breadcrumbs. 

Place it on the prepared cookie sheet. Drizzle each piece with a small amount of olive oil. Bake for 25-35 minutes or until the juices run clear when you cut into it. 

*I noticed mine getting brown quickly, not sure if it was just my oven or what but I tented it with foil after the first 10 minutes to prevent it from getting any darker.
