Hey guys! The week is halfway over, I hope it's been good for you all so far :) I'm super excited to share these bars with you all, they are SO good! I had some raspberry preserves in the fridge leftover from the holiday's and I wanted to figure out something to bake with it, so these babies happened! In my personal opinion, these are perfect and are exactly what I think of when I think of a raspberry shortbread type bar. They also could not be any easier to make (1 bowl folks - my favorite kind of recipe!), so there really is no excuse not to give them a try ;) you will be so glad you did!
Ingredients:
2 Sticks Butter, softened (plus more for pan)
2 1/4 Cups All-Purpose Flour
1 Cup Old Fashioned Oats
1/2 Cup Brown Sugar
1/2 Cup Granulated Sugar
1 Egg, beaten
1/4 Teaspoon Salt
1 Cup Raspberry Preserves (or you can sub in your favorite)
Directions:
Pre-heat oven to 350 degrees and grab a 8-inch square baking dish.
In the bowl of a stand mixer, add the flour, both sugars, oats and salt and give it a slight mix, then add the butter and mix until combined, scraping the bowl if necessary, then add the egg and mix well until the mixture resembles coarse crumbs. Set aside 2 cups of the mixture.
Butter or spray your pan (I like to use the wrapper of the butter - there's usually plenty stuck on it to coat the dish) and dump the mixture in and using your hands, press it down into the pan in a even layer.
Spread your preserves over the mixture evenly. Take your mixture that you set aside and sprinkle it all over the preserves. Bake 40-50 minutes until golden brown. Cool completely then cut into squares.
{I like to use the butter wrapper to grease the dish - it usually has plenty to do the job!}
