How fun are these?! I didn't realize it until I was putting all of my pictures together, but these have all of those warm colors of Fall going on in them - I love that! I can sense that Fall is just around the corner and that everyone is starting to get in the spirit, though it's a little hard here in the Dallas area seeing how the temps are around 103 degrees this week, yuck! Like I said before though, these cookies definitely give me some Fall cheer when I look at them :) Also, my 2 year old LOVE them, can't beat that!
Ingredients:
1 Stick Butter, softened
3/4 Cup Light Brown Sugar, packed
1/2 Cup Granulated Sugar
1 Large Egg
1/2 Cup Creamy Peanut Butter
1 1/4 Cups All-Purpose Flour
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Teaspoon Vanilla Extract
1 10 oz. Bag Mini Reese's Pieces Candies
Directions:
Pre-heat oven to 350 degrees.
In a large bowl, cream together butter and both sugars until light and fluffy. Add egg and vanilla; mix well.
In a separate small bowl combine the flour, salt and baking soda.
Gradually add flour mixture to butter mixture, mixing until just combined evenly.
Scoop out teaspoon-sized portions of dough and roll into a ball in your hands, and place on cooking sheet. Gently using your index and middle finger flatten the ball of dough until it's slightly bitter than a quarter in diameter. Press several mini Reese's Pieces candy on top. (I think I got about 10 candies on each piece of dough)
Bake for 6-7 minutes, or until just barely starting to turn a light golden color around edges. Transfer to wire cooling rack. Store in air-tight container for 4-5 days.
Makes about 83 mini cookies
