Pepperoni Pizza Pie Pops

Okay so, these were probably one of the funnest things I've made to date! They're just awesome. Your own little personal pizza on a stick, who wouldn't love that?! These are great for grown-ups, and at the same time they are awesome for kids. My daughter loved it! She's a little over 2 so she thinks pretty much any form of food on a stick is like the greatest thing ever, but I could tell she thought these were extra fun - and they are! I hope you give them a try :)

Ingredients:
1 Roll Refrigerated Pie Crust
12 Slices Pepperoni
6 Tablespoons Shredded Italian Cheese Blend
1 Large Egg, beaten
1 Tablespoon Grated Parmesan Cheese
1 Teaspoon Dried Parsley
1/2 Teaspoon Garlic Powder
6 Lollipop Sticks (I used the longer ones)
Flour, to roll/cut pie dough

Directions:
Pre-heat oven to 350 degrees.

On a very lightly floured surface, roll out your pie dough and gently give it 1 roll-around with your rolling pin to get it night and flat after being rolled up.

Using a round cookie cutter (mine was about 2 1/2-3 inches, you could use the opening of a drinking glass instead that is about the same size) cut out 12 rounds of pie crust. Re-shape and roll the scraps of dough if needed.

Cover a cookie sheet with aluminum foil (or parchment paper/baking mat) and spray lightly with non-stick cooking spray.

Place 6 of the pieces of dough on the cookie sheet. Take a lollipop stick and press it into the piece of dough, making it stick about halfway up, repeat for the rest of the pieces of dough. Place 1 tablespoon of cheese onto each round, and then top each piece with 2 pieces of pepperoni.

Cover each piece with the remaining dough rounds, and using a fork crimp the edges shut. Gently brush the tops of dough with the beaten egg.

Mix together the parmesan, parsley and garlic powder. Sprinkle mixture on top of each pop.

Bake for 10-12 minutes, or until the dough starts to turn golden brown. Serve with marinara, ranch dressing, alfredo sauce or anything you like..they are great just as they are!
