Lofthouse Sugar Cookies

Hi there :) I hope every one's week is going good so far. I can't believe I'm about to say this, but we are expecting up to 6 inches of snow tomorrow. This is SO crazy for Texas! I also can't believe I'm looking forward to Summer already..I'm sure that will change the first day it's 100+ outside though, ha! So Valentine's Day is coming up and you know I couldn't let it pass without making some cute goodies. Whenever I have an excuse to make anything pink, I'm so there! I'm sure many of you are familiar with the Lofthouse Cookies you find in the grocery stores. I'm totally guilty of occasionally getting a pack because there is nothing like them. They are soft and have a unique taste, not to mention they always make them so darn cute with all of the seasonal frosting and sprinkles they use..so you know I just had to do mine up the same! I frosted these with my Buttercream Frosting and it was perfect, these were SO addicting! Seriously, if you like Lofthouse's cookies, you will freaking LOVE these and want to make them like..tomorrow! Enjoy! :)

Ingredients:
1/2 Cup Sour Cream
1 Cup Granulated Sugar
1/2 Cup Butter, softened
2 Eggs
1/2 Teaspoon Vanilla Extract
3 Cups All-Purpose Flour
1 1/2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
Sprinkles, to decorate

Directions:
In a large bowl combine sour cream, sugar, butter, eggs and vanilla; mix well. In a smaller bowl combine flour, baking powder, baking soda and salt, then add to wet mixture and mix until everything is just incorporated. With a cookie scoop, scoop out even size scoops of dough and then roll in a ball in your hand and place on a cookie sheet and slightly flatten with your hand so it's in a circular shape. Bake in a pre-heated 350 degree oven until light golden brown, no more than 10 minutes. They may seem under done but they aren't. Transfer to a cooling rack and let cool completely before frosting.

  1. Those look like something my daughter would love to make.. She loves anything pink. And all that snow coming your way I have had it all day up here in Kansas.. Calling for up to 14 inches buy the time its done sometime tomorrow..

  11. I made these cookies today.
    I was disappointed.
    They were underbaked.
    I am using a electric oven. Do you
    think that is why they are underbaked?

  12. oliemommy: I'm sorry they didn't turn out for you. I don't think the oven should make a difference. I myself have an electric oven and every batch turned out perfect for me. Maybe it was the way the batter was mixed or maybe there was an ingredient forgotten? I have had several people make them with no problems..I wish I knew what went wrong so I could help you, sorry about that!

    After they were completely cold and had set for hours, they weren't doughy anymore.
