Monster Cookies


Good evening! I hope everyone had a nice & relaxing weekend. We did over here! The weather was so perfect around Dallas, we enjoyed some time outside of the house yesterday, and today it was all about football and baking! I made these super delicious cookies to share with you guys today. I recently got a big cookie scoop and they came out HUGE, so perfectly fitting for Monster cookies don't you think? Give these a try this week with some Halloween themed m&m's to make them super festive!

Ingredients:
1 1/4 Cups Light Brown Sugar, packed
1 Cup Granulated Sugar
3 Eggs
1 Stick Butter, softened
12 oz. Creamy Peanut Butter
4 1/2 Cups Old Fashioned Oats
1/2 Teaspoon Salt
1 Teaspoon Vanilla Extract
2 Teaspoons Baking Soda
1/2 Cup Semi-Sweet Chocolate Chips
1/2 Cup m&m's
2 Cups Rice Krispies

Directions:
In a mixer combine the eggs, brown sugar and granulated sugar and mix until evenly incorporated. Add the salt, peanut butter, vanilla and butter; mix well. Next add the chocolate chips, m&m's, baking soda and oats; mix well. Gently stir in the rice krispies (you don't want to be too rough with them and crush them all up). With a cookie scoop or 2 spoons, drop the dough 2 inches apart onto a cookie sheet and bake 8-10 (mine took a little longer,11-13 minutes, because of my large cookie scoop) minutes in a pre-heated 350 degree oven. Let sit on cookie sheets for a few minutes before transferring to a wire rack to cool completely. (as soon as the cookies came out of the oven I added a few more m&m's on top, pressing them into the cookie slightly)
